Jean Johnson Family Recipes
The Johnson Family Candied Sweet Potatoes:
4-5 medium-sized sweet potatoes, cooked, peeled, medallioned and arranged in a baking dish
1/4 cup butter or margarine (about 57 grams/milliliters)
1 cup brown sugar (about 228 grams)
1/4 cup coffee (about 57 milliliters)
Prepare and arrange the sweet potatoes in an oven- or microwave-safe dish. In a saucepan on medium-low heat, melt the butter, then add the brown sugar and coffee. While stirring, bring to a boil and boil for five (5) minutes, then pour over the sweet potatoes and bake at medium heat (turkey-cooking heat, 350F-ish) for 20-30 minutes or until heated through, then serve to your guests. Serves 4-6...but expect to make twice as much next time!
